Watermelon is one of the quintessential fruits of summertime. There’s nothing better than sitting outside, enjoying the sun and a juicy slice of watermelon.

However, there’s other ways to enjoy this fruit besides just a slice. Why not try it in a salad? But I’m not talking fruit salad here people.

This is a recipe for watermelon and feta salad. Who knew watermelon could taste delicious with vinegar and salt? The in-season vegetables make this salad taste fresh. I had this along with some grilled chicken and corn on the cob last night and it paired well. It’s a delicious and refreshing take on a typical summer salad and it only takes 15 minutes to prepare.

Here’s what you’ll need:

2 Tbsp. olive oil

1 Tbsp. white wine vinegar

1 Tbsp. fresh lime juice

Kosher salt and pepper

¼ small red onion, thinly sliced

1 1-lb. piece seedless watermelon

½ seedless cucumber, sliced into half-moons

3 cups baby arugula

3 oz. feta, crumbled (about ¾ cup)

 

1. Whisk together dressing

In a large bowl, whisk together the oil, vinegar, lime juice and ¼ tsp. each salt and pepper. Add the onions and let sit, tossing occasionally, for 10 minutes.

2. Cut the watermelon

Meanwhile, remove and discard the watermelon rind. Cut the watermelon into thin 2 in. pieces.

3. Toss the salad

Add the watermelon. Cucumber and arugula to the bowl of onions and gently toss to combine. Top with the feta.
